THE DORIAN

Led by Cal-Italian Chef de Cuisine, Anthony Santonastaso and Palm House Hospitality Executive Chef, Jake Lucas, we feature a palette of Californian comfort that speaks to natural, local, and seasonal ingredients. We take pride in our intentional sourcing practices, with produce from partners like Star Canyon Ranch & Black Diamond Mushrooms, sustainable proteins from CreamCo. Meats and Four Star Seafood and our delicious burrata and mozzarella from Double 8 Dairy Farm. We strive to replenish the spirit, reconnect with our local lands, and foster genuine human connection. 

Inspired by Oscar Wilde, it’s all about enjoying life’s sensual fulfillments, without all the downside. Serving shareable Cal-Mediterranean fare, craft martinis, cocktails and aperitifs amid a turn-of-the-century manor, The Dorian's menu was devised to touch upon health, longevity and genuine connection.
